Cheesemaking: Whey

Curds and Whey
As soon as the curds are cut, whey starts to exude as they sink down into the vat.

The curds are made into cheeses in an hour or so, but where does the whey go?  Some is reserved for our pigs to drink and the rest is diverted to the manure pit to be spread on the fields twice a year.
