Monday Menu: Pork and Roasted Tomato Sauce

Skillet Dinner
 This came together quickly, and fed us well for two days.


I browned a pound of pork, spiced with black pepper, Italian spices and salt.


I added a quart of oven-roasted tomatoes - the last from the freezer from 2010.  So good!  So simple!  So sad, we won't have Arethusa Farm's tomatoes to put by this year:(
