Weekend Cook: Smoked Pork Tenderloin

Another Manager's Special from The Hannaford supermarket!  So easy just to throw a tenderloin on the Traeger smoker for 1 1/2 - 2 hours.

I coated the tenderloins in mustard and Dizzy Pig Red Eye rub, and set the probe for 145f (cooking at 225-250f).  After the alarm, I removed it from the smoker, covered them in foil and a heavy towel for 20 minutes.

So very, very moist, smokey, and perfect for sandwiches.

Although we didn't just eat them in sandwiches.

I'm always floored that pork tenderloin is cheaper than pork ribs at the supermarket.  Whatever!
