Weekend Cook: Buckwheat Crepes

There are going to be a couple of tries to get a buckwheat crepe or pancake that passes muster.  Dan grew up eating them, so there's a bar.  So far, he's complained about the color of the buckwheat flour (too pale) and that the flavor of the crepe was not "buckwheaty" enough.

I used a basic crepe recipe, substituting buckwheat for half of the GF flour called for.  The result had a short texture and not much suppleness - however, the caramelized apples more than made up for any shortcomings.  At least, in my eyes.
