Weekend Cook: Baby Backs

Ribs on the Traeger Smoker
 It was a lazy day, so we fired up the Traeger and smoked two racks from Bob's Meat Market with grapevine pellets.  I used Dizzy Pig Swamp Venom for the rub and cooked them for one hour at the "smoke" setting, then three more at 250f.


I sauced them, and 40 minutes later they were done!  This is one of the few times I have cooked ribs without a foiling/steaming step and I was worried they would be dry, but they were fine.

Next week is the Super Bowl, isn't it?  I've got 6 racks on order at Bob's Meat Market!
