Pantry Raid: Shrimp Scrimpy


Is scrimpy even a word? It doesn't matter.  There wasn't much food in the house: frozen peas, frozen shrimp, boursin and parmesan cheese.  I did what I could with what I had; it was too cold to venture out.


Added some onion, garlic, and glass noodles (to protect the shrimp from being overdone).   The goal was to get a crunchy noodle topping going on, with a creamy base.


Not very crunchy, but the shrimp were done perfectly and the cheese fell through the noodles and stuck to the peas at the bottom of the dish.   It needed sriracha.  Fortunately, I had some.  Not bad for a pantry raid.
