Wheatless: Bisquick Pancakes with Caramelized Cortlands

Bisquick Pancakes with Caramelized Cortlands
 I made the batter a bit thinner than the directions stated and they were still lovely.  To make the apples:

3 Medium Apples, sliced
Zest and Juice of 1/2 Lemon
1/2 tsp. Freshly Grated Ginger
1 TB Brown Sugar
1 TB Butter

I mixed that all together and sauteed in a non-stick pan until the sauce thickened, and grated nutmeg over it all.  Lovely balance of flavors and the apples were slightly soft, but not mushy.
