Sweet Potato

Sweet Potato
 I appreciate the value of a Vermont-grown sweet potato.  They have a long growing season which makes them difficult, which was why I was surprised to see them at the Burlington Farmer's Market (Full Moon Farm).  This is my favorite way to do them, oven-roasted at 375f for about 45 minutes (turning once).


It made an interesting combination with a chicken tamale and leftover goulash.
