Wheatless: Pan de Yuca

 The whole day was running late and there was no food in the house, if you can believe it - so I fired up the oven and baked four of these little South American "bread" balls made of cassava starch (a root) and cheese.

Doesn't look like much, but looks are deceiving.

These didn't quite taste like pizza, more like Doritos.  They were very bouncy in texture, and it occurred to me that it was probably a good thing that I hadn't read the calorie statement on the package, because that probably would have robbed me of enjoying them.  Anything that tastes like snack food has to be bad for me, right?
