Roast Beef (Rib Roast)

Prime Rib Roast
It's easy to cook a beef roast.  Set your oven or Big Green Egg to 300 - 350f and place a probe set to alarm at 131f in the horizontal center of the meat.  Go do something else for two and a half hours.

I cooked two rib roasts this day, pulling one off at 133f (medium) and the other at 131f (rare).


Dan removed the ribs and carved the meat for the "Turkey Day" crew.  I'll be cooking those ribs as a bonus meal, tomorrow!
