Quick and Easy: Beef Tenderloin

I needed to make supper, and didn't have much time.  I quickly sauteed mushrooms, onions, and julienned carrots and put them in the bottom of a casserole dish.


I turned the oven to 300f while I seared the beef filets, placing them on top of the vegetables.  I covered the dish in aluminum foil and let it bake for 30 - 40 minutes.

After removing the dish from the oven, I covered it with a heavy towel to keep it warm while waiting for Dan to return from evening chores.  Rare beef and vegetables, done!
