What's in it?
Just whites, no yolks. It's "hen-o-pause". When a laying hen is nearing (or at) the last days of it's productive life, these small eggs appear. This means we are getting closer to "stewing hen day" on the farm, when a few hens are selected to give us eggs over the winter and the rest are processed for soup stock.
