Wheatless: Namaste pancakes

I must have happy food for breakfast. 

Using the Namaste mix, all I had to do was add: eggs, kefir (instead of the milk it called for), and a little oil.

I also added some chopped pecans and nutmeg to make them my own.

These pancakes are very blonde, chewy, dense, and not spongy or fluffy.

Pancakes are one of the wheat-free foods that my husband says aren't all that different tasting from "regular" pancakes so I don't feel like I'm making us both miserable, like I do when I fix a faux "pizza".
