Cheesemaking: Ready for wrapping
These Brother Laurent cheeses are ready to be wrapped and placed into cold storage. They will be ready for sale in a couple of months. To the left you can barely see the only batch of Madison that we made for the year. Cross fingers for that lot, it's coming out a bit softer than I would like - it will either be spectacular, or a spectacular failure.
