A one-inch steak takes 1 1/2 hours total at 200f (1 hour) 250f (1/2 hour). I used cherry wood for smoke and rubs from a new company to us, Oakridge BBQ. The sirloins were coated overnight, and the low-slow method of cooking made them very tender - without any marination.
Look at those smoke rings! Beautiful. I had an assortment of med-well to rare and all tastes were covered.
