Cheesemaking: Too cold to make cheese

Freshly-made blue cheese
We won't be making any cheese until the temperatures get above zero. We can't keep it 80f in the plant for the 18 hours that it takes to transform milk into cheese, particularly since we are busy trying to keep the rest of the farm from freezing up; animals need water, water freezes, all hell breaks loose.  That's another reason why vacations are not a good idea.
