Yes! Pork cutlets on the grill. They cook in a flash.
I grilled some shiitakes and tomatoes for sides.
I had marinated the cutlets in commercial vinaigrette overnight so they would be tender, but some cutlets were tough. I think that I didn't put enough marinade in the bag, and the meat received uneven exposure to the vinaigrette.
The following day, I cut up the leftover meat for a quick salad.
Just mayonnaise and sriracha added to taste.
Served with lots of veggies and Vermont mozzarella. It would make a great sandwich filling.
