Quick and Easy: Cream of Broccoli Soup


Homemade cream of broccoli, thick and rich.


So easy!  Stew together:

3 Broccoli Stems, peeled and cut into pieces
5 Garlic Cloves
One Carrot, cut into pieces
4 ounces of fresh Crimini
2 Medium Onions, sliced
3 Cups Stock
3 Ribs of Celery, sliced

When veggies are soft, process with an immersion blender until smooth.  Add about one cup of cream, depending on how thin you like it; adjust seasoning.  I made this on a day that I went to the supermarket and forgot to pick up anything convenient for lunch.  It took less than an hour.
