More from the quest for crispier grilled wings, this time on the gas grill with the cover down, (set at low). I found they were cooking too quickly on the outside, so I put them on a sheet pan in the oven set at 350f for 40 minutes to finish cooking.
They had been coated in the house rub, and then dusted with cornstarch prior to grilling.
Crunchy bits, but not crispy skin.
They were very moist, but so far, grilling over charcoal has worked the best for crispy wings.
