This is an easy "hot lunch," just like the Lunch Ladies made back in the day - and that's regular bread, not gluten-free (it was Dan's plate). I tried this with gf bread and it was just not right at all. I'll be eating mine with rice.
A tablespoon of garlic, minced.
One large onion, cooked until soft and set aside.
One pound of lamb, browned.
I added the garlic, onions, one cup of tomato puree and two tablespoons of sundried tomato pesto from a jar. I would have used tomato paste, but I was all out - and the pesto looked "pasty" enough to substitute as a thickener.
Brought to a simmer, and I added two tablespoons of Worcestershire sauce, and salt and pepper to taste. The sauce is, I think, the lunch lady secret ingredient because after it was added, the flavor became familiar.
Is it anything like the lunch ladies made back in grade school? Not really, they made it much sloppier and served it on hamburger buns. However, it gave me a wicked case of heartburn, just like I remembered.
Dan said that the lunch ladies at his school made a sweeter version, but then again, they didn't use local lamb or sundried tomatoes, either.
