Weekend Cook: T-bone with campstyle sides

There's nothing easier to grill up than vegetables "camp style" - veggies cooked in aluminum foil. These are "negligee beans" from Arethusa Collective (rinsed in water, so they will steam). They are very sweet, with a slight green bean flavor.

The potatoes (from Half Pint Farm) are thinly sliced, drizzled with sunflower oil and sprinkled with salt and pepper. The oil helps them to caramelize and to prevent sticking to the foil.


On "high" sear both steak and foil pouches for ten minutes each side (cover up). Then turn the heat down to "low" and move the steak to the side of the grill that you have turned "off" (cover down, for 20 minutes).

The foil pouches stay over the heat, and depending on how thick the vegetables are they can be removed after 10 minutes (if thin), or kept on for the entire 20 minute baking step. I left mine on for the entire 20 minutes.
