On The Side: Grilled Lettuce, Radicchio

The simplest of all grilled sides, head lettuces from farmer's market.

The beautiful large radicchio, halved are from Arethusa Collective.

The green head lettuce, halved, from Half Pint Farm.

Sprinkle Cheetah Marinade on the cut side, and straight to a hot grill.

Three minutes a side for the green, 4-5 for the red.

Nice char marks.


The larger heads take longer, I only want them to wilt slightly as the residual heat will continue to cook them after I take them off.

It's a beautiful thing.


I just sliced them into serving sizes and placed the meat of the day over the top.
