Blues fare weather
The chill weather has not adversely affected cheesemaking, though it is hard to justify the heating oil it takes to keep the make-room warm when the temperatures outside fall well below zero. The outdoor thermometer showed -10f this morning, but I think it's broken, the dial will not go above "0".
At the plant, two curing rooms are kept at the proper temperature using red heat lamps (note the rosy glow on the white racks). The curing room on the end of building that faces west (and the wind) cannot be kept warm enough this time of year and will lie fallow for a month or two.
