Weekend Cook: Smoked Boucher Farm Chicken

 For this cook on the Traeger smoker, I left the temperature at 225F for about two hours plus, until this 4.5 lb. bird registered 160f in the breast.  I had coated it in the house rub of turbinado, paprika, onion and garlic powders.

The veggies were simply washed and salted.  They weren't completely cooked through and had to take a trip through the microwave to finish.

One regret: no pan sauce or gravy!  Nothing that a pat of butter couldn't solve, though.
