Baked Polenta |
I had a tube of prepared gluten-free polenta, Bove's Vodka Sauce, a jar of artichoke pesto, 1/2 jar of olive paste, and many, many partial pieces of cheese including Vella Jack, smoked cheddar, parmesan, and Vermont mozzarella. I topped the whole thing with corn crumbs and coarsely ground pepper. (Baked at 400f for 35 minutes)
The man had seconds, possibly thirds (I don't monitor him all that well), so for something he thought he didn't like, it came out just fine...and yes, I know how to prepare polenta from scratch, but the tube was nearing the "feed to chickens" expiration date - you know the drill - I had to cook it up.
