Beef Stuffed Peppers (again)

Beef Stuffed Peppers with Vodka Sauce
Ingredients:

6 - 8 Small - Medium Sized Peppers, top slice removed; seeded and deveined

Stuffing:

1 lb. Lean Ground Beef
2 TB Unseasoned Dried Breadcrumbs
1 Small Egg, lightly beaten
3/4 tsp. Kosher Flake or Sea Salt
1 tsp. Black Pepper Flakes
2 generous tsp. Sriracha or any hot sauce
One Medium Onion, grated
6 Cloves Garlic, grated

 Optional: 2 – 4 ounces of grated cheese for topping (mozzarella and/or cheddar)

Combine stuffing ingredients and refrigerate for 1/2 hour.  Stuff peppers and place on a sheet pan sprayed with canola oil.  Top with cheese.  Bake at 375f for 30 - 35 minutes or until cheese is melted and stuffing is cooked through.

Serve with red sauce.
