Veal Chops

This is a good time of year to organize the freezer, cooking up the oldest packages and making stock from the bones, mushroom bumps, and veggie scraps I've saved up.

I also found some beautiful 2-inch thick veal chops, which I decided to claim, instead of sell. I marinated them overnight in Newman's Own Lime Vinaigrette.

On to a gas grill (on high) for 8 minutes a side, then on to the smoker - I was cooking wings in the Big Green Egg - to bake for 10-12 minutes (at 300f).

After a 20 minutes rest under foil and a heavy towel, I had perfectly rare chops.
