Dawn's special potato, casserole


When I found out I couldn't eat wheat anymore, I figured the condition would eventually wear off and I would once again enjoy Reubens, deep-fried chicken blt's, sausage gravy, and smoked meat sandwiches at the My-T-Fine diner in Swanton. Not so.

Salad bar foraging (sigh) and bunless hotdogs (some joy) leave little else to pick from on the regular menu.

But thanks to the owner/chief cook, Nancy, I now have "Dawn's special" potato to order. What's that? It's a baked potato stuffed with bacon, broccoli, jalapenos and Monterey Jack cheese, served with sour cream and butter.

For a side dish I put Dawn's special into casserole form. No recipe, just all the above ingredients baked for 40 minutes at 375f. Very hearty fare.
