No cheesemaking this week
Thanksgiving doings are at my house this year, so we are not making cheese this week - however, there's still plenty of work to be done at the plant. These blue cheeses are from last week and have been pierced by hand with knitting needles, making tiny holes that allow air into the interior of the cheese. This creates the "fuel" for the actual blue of the blue cheese to start colonizing the interior. Can you see the holes?
