Salmon Burger |
One of the things I miss about not being able to eat wheat anymore, are Filet-o-Fish(es) from McDonald's. This wheatless interpretation was not a facsimile, but it was plenty good. I fried up a simple fish burger (1 lb. cooked salmon, 1 egg, 2 TB breadcrumbs), plus Swiss cheese, veg and Wickles pickles (so good).
Forget about the burger - this is all about the pickles.

I read about these gems on a foodie forum and had to buy them when I saw the jar at the Hannaford. They are crunchy, hot, sweet - perfect for a burger or a fishwich - and they'll probably make a killer tartar sauce as well.
