Monday Menu: Roasted Veggie Stuffed Peppers



I stuffed some squash blossoms with the filling too, and made the Maple Mustard Dressing again.


All sorts of veggies on the grill, plus fresh garlic and onions.  The baby carrots are in foil because I didn't want them falling through the grate.  This is my usual way of treating the veggies that I come home from market with, because adding them to rice is a quick and easy meal during the week.




I have no idea where this corn came from, but it certainly wasn't fresh.  Freshly picked corn can go on the grill, 10 minutes a side with the cover down, no problem.  These ignited. Fun times.


No too badly singed.


The rest of the veggies were chopped for the filling.


Tablespoon of cream cheese, carrots, fresh parsley, salt and pepper - nothing fancy.


Stuffed and then pan fried.


Mess on a plate, the way we usually eat.  I gotta bottle that dressing!
