Monday Menu: Beef Ribs
Time for a set-it-and-forget-it cook. Beef ribs coated in Dizzy Pig Jamaican go on to the Big Green Egg (250-300f) for 10 hours.
As it was late by then, so I put them in a covered casserole for 4 hours more (250f). (Yes, in the oven)
Ta da! Around midnight: smoky, tender, spicy beef. Too hot to cook, and too late to eat.
