A few days before Christmas, I cut up some Brother Laurent, and a Gore-Dawn-Zola extra-aged and delivered those cuts to two local businesses. One allows us to use their UPS drop; the other provides coolers, boxes and ice packs that we re-use when we pack and ship cheese.
